Thymus vulgaris is a low, woody herb that forms a dense cushion of tiny grey-green leaves with a warm, powerful scent when you brush past. In summer the whole cushion is covered in small pale pink flowers. It reaches about 15-25 cm in height and 30-40 cm in width, and it keeps its leaves right through the winter. Plant 7-9 per square metre for a solid mat, or tuck single plants into the gaps between paving slabs. It flowers from June to August and every plant hums with bees and butterflies. It works in a rock garden, along a sunny path edge, on a dry wall or in a pot by the kitchen door where you can pick it.
Thyme needs full sun, the more heat and light it gets the stronger the flavour and the tighter the growth. Give it poor, gritty, free draining soil and avoid rich or heavy ground, which makes it soft and short lived. It is genuinely drought tolerant once rooted, so water only in long dry spells and remember that a pot dries out far quicker than open soil. Trim the whole cushion back by about a third straight after flowering to stop it going woody and bare in the middle, but do not cut into the leafless old wood. It is hardy and stays green through frost, so no winter protection is needed, just make sure it is not sitting in wet soil.
